Cheesy Taco Potatoes recipe

 


A crispy, cheesy, flavor-packed dinner that’s super easy and perfect for sharing!


🥔 Ingredients (Serves 4–5)

  • 4 large potatoes (Russet or any baking potatoes)

  • 1 lb (450g) ground beef or chicken

  • 1 packet taco seasoning (or 2 tbsp homemade mix)

  • ½ cup water

  • 1½ cups shredded cheddar or Mexican blend cheese

  • ½ cup sour cream

  • ½ cup diced tomatoes

  • ¼ cup chopped green onions

  • ½ cup corn (optional)

  • 1 tbsp olive oil

  • Salt & pepper to taste


🔥 Instructions

1️⃣ Prepare the Potatoes

  • Wash and cube the potatoes (small bite-size pieces).

  • Toss with olive oil, salt, and pepper.

  • Bake at 400°F (200°C) for 30–35 minutes until golden and crispy.
    (Or air fry at 190°C for about 18–22 minutes.)

2️⃣ Cook the Taco Meat

  • In a pan over medium heat, cook ground beef until browned.

  • Drain excess oil.

  • Add taco seasoning + ½ cup water.

  • Simmer 5 minutes until thickened.

3️⃣ Assemble

  • In a baking dish or skillet, layer crispy potatoes.

  • Spoon taco meat evenly over them.

  • Sprinkle generously with shredded cheese.

4️⃣ Melt & Serve

  • Bake 5–8 minutes until cheese melts.

  • Top with sour cream, tomatoes, green onions, and corn.


🌶️ Optional Add-Ons

  • Jalapeños for heat

  • Avocado slices or guacamole

  • Black beans

  • Hot sauce

💡 Quick Tip

Want it extra crispy? Broil for the last 2–3 minutes (watch carefully!).
