Pizza Enchiladas with Ground Beef & Pepperoni

Ingredients


1 pound lean ground beef

1 cup yellow onion, diced

1 medium green bell pepper, diced

3 ounces pepperoni, chopped

1 tablespoon garlic, chopped

1/3 cup pizza sauce

1 tablespoon Italian seasoning

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/3 cup bacon, crumbled

8 large flour tortillas

2 cups pizza sauce

2 1/2 cups mozzarella cheese, shredded

3 ounces pepperoni slices

1/4 cup bacon, crumbled

  1. Step 1: Preheat oven to 375°F. Grease a baking sheet.
  2. Step 2: Cook ground beef in a skillet over medium-high heat until no pink remains.
  3. Step 3: Add onions, bell pepper, and chopped pepperoni. Cook until softened, 5–7 minutes.
  4. Step 4: Stir in garlic, cook for 2 minutes, then remove from heat.
  5. Step 5: Mix in pizza sauce, Italian seasoning, ricotta, mozzarella, and bacon.
  6. Step 6: Fill tortillas with beef mixture, roll tightly, and place seam-side down on sheet.
